Portobello Mushroom Burgers

INGREDIENTS
4 portobello mushrooms

1/4 cup Italian dressing

4 leaves of lettuce

4 potato or wheat hamburger buns

4 slices low-fat mozzarella cheese

1/2 cup roasted red bell pepper slices

1 tomato, sliced

PROCEDURE

Using a sharp knife, make a few cuts, 1/4-inch deep (not all the way through), into the top of each portobello mushroom cap. Brush the tops and undersides of mushrooms with Italian dressing. Let sit at room temperature for 10-15 minutes

Broil mushrooms for 3-5 minutes on each side, until mushrooms are tender. Remove from oven and cover each mushrrom with slice of cheese.

Place a leaf of lettuce on the bottom half of a hamburger bun. Top the lettuce with mushroom covered in cheese. Arrange red bell pepper slices and tomato slices over the mushroom. Cover with top of potato bun.

If you want, add favorite hamburger condiments, such as ketchup, mustard, pickles.

Serve immediately.
