INGREDIENTS
8 medium potatoes, peeled
1/2 cup fresh salsa
1/2 cup low fat milk
½ cup shredded taco cheese
1 tsp salt, or to taste
PROCEDURE
Cut potatoes into 2 inch chunks. Put potatoe chunks in a large saucepan and cover with water. Stir in 1 tsp. of salt. Cook over medium heat until tender, (check with a fork) about 25 minutes.
Drain all the water from the potatoes and return to the pan.
Set the pan over low heat and add the salsa, milk and cheese. Stir until blended. Remove pan from stove and mash with an old-fashioned potato masher or hand-held mixer until they are smashed the way you like them.
Transfer into a warm bowl and serve.
